RAW ROSE CHOCOLATE BARK

IMG_6690 copy IMG_6691It’s Valentine’s Day and either I’m feeling romantic or my post-surgery painkillers are really doing their job! I’m on day one post wisdom teeth and while I’m spending V-Day alone, I decided to make this raw choccy bark for any visitors coming to see me or just for any awesome people in my life who deserve some love!

I literally made this in 5 minutes and the longest part of the process was melting the cacao butter. You can top this with any combination of dried fruits/nuts but I decided to go for a Valentine’s theme in terms of colours. Whip this up for your friends, family, your bae or enjoy alone, this chocolate bark is essentially guilt free and tastes delish!

  • 200g X cacao butter (melted)
  • 1/2 X cup cacao powder
  • 1/3 X cup coconut nectar (or other sweetener)
  • 1/2 X tsp organic vanilla powder
  • 1/2 X cup pistachio nuts
  • 1/4 X cup goji berries
  • 1/4 X cup coconut flakes
  • 2 X tbsp dried rose petals (edible)
  • Pinch of Himalayan pink salt

Line a baking tray with grease-proof paper and set aside.  Combine melted cacao butter, cacao powder, coconut nectar, vanilla and salt in a bowl and whisk until smooth. Pour over your baking tray and sprinkle with pistachios, goji berries, rose petals and coconut flakes. Place in the fridge for 30 minutes or longer then break into small pieces of “bark”!

Pro tip: If you have room in your freezer, pop the tray in your freezer for about 15 minutes. This will make your bark set almost instantly.
