With upcoming dental surgery approaching, I’m making most of textured foods this week (before I’m reduced to eating just smoothies and ice cream for a while!). And today that meant pancakes for breakfast, protein pancakes that is.
These pancakes use Bare Blends chocolate protein (free from gluten, soy and preservatives) and as well as extra raw cacao for a decadent chocolate flavour. I used quinoa flour this morning, which has quite a strong taste but you could easily use any type of flour, such as coconut, rice or buckwheat.
Makes 4 small pancakes (serves 1)
- 2 X eggs (lightly whisked)
- 1 X banana (mashed)
- 1 X scoop chocolate protein powder
- ¼ X cup flour of your choice
- 1 X tbsp raw cacao powder
- 1 X cup cherries (halved, fresh or thawed)
- Dash of almond milk, if needed
Combine all ingredients except cherries in a small mixing bowl and whisk until smooth. Pour ¼ of mixture into a small fry pan over medium until edges start to brown. Add a few half cherries before flipping and cooking on the other side. Repeat with remaining batter.
I served mine with coconut yoghurt and a drizzle of maple syrup. Yum!
